- 2 chicken breasts
- 1/4 cup honey
- 2 tablespoons chipotle in adobo sauce
- 2 cups cooked rice
- 1 can black beans, rinsed and drained
- 1 cup corn (fresh or frozen)
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- Lime wedges for serving
Instructions
- Mix honey and chipotle in adobo sauce together in a bowl.
- Marinate the chicken breasts in the mixture for at least 20 minutes.
- Grill the chicken on medium-high heat for about 6-7 minutes per side, or until fully cooked. Let rest before slicing.
- Layer cooked rice in serving bowls, followed by sliced chicken, black beans, corn, diced avocado, and top with fresh cilantro.
- Season with salt and pepper, and serve with lime wedges.
