Description

A delightful dish combining tender chicken, creamy avocado, and flavorful rice with a sweet and tangy honey lime marinade.


Ingredients

  • 1 lb boneless skinless chicken breasts
  • ¼ cup honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • Salt (to taste)
  • Pepper (to taste)
  • Oil (for cooking)
  • 1 cup cooked rice (white or brown)
  • ¼ cup fresh coriander, chopped
  • 1 tablespoon lime juice
  • 2 ripe avocados, sliced

Instructions

  1. Mix honey, lime juice, lime zest, minced garlic, salt, and pepper in a bowl. Add chicken breasts and coat them well with the marinade. Let it sit for at least 15 minutes.
  2. Heat oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from heat and slice into strips.
  3. Combine cooked rice, chopped coriander, and lime juice in a bowl. Season with salt to taste.
  4. Drizzle slices of avocado with lime juice and sprinkle with salt and pepper.
  5. Layer rice on a plate, followed by slices of chicken, and top with avocado for a great presentation.

Notes

For the best flavor, let the chicken marinate longer and use ripe avocados. Consider adding black beans or corn to the rice mixture for a twist.
