- 1 lb boneless skinless chicken breasts
- ¼ cup honey
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 cloves garlic, minced
- Salt (to taste)
- Pepper (to taste)
- Oil (for cooking)
- 1 cup cooked rice (white or brown)
- ¼ cup fresh coriander, chopped
- 1 tablespoon lime juice
- 2 ripe avocados, sliced
Instructions
- Mix honey, lime juice, lime zest, minced garlic, salt, and pepper in a bowl. Add chicken breasts and coat them well with the marinade. Let it sit for at least 15 minutes.
- Heat oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from heat and slice into strips.
- Combine cooked rice, chopped coriander, and lime juice in a bowl. Season with salt to taste.
- Drizzle slices of avocado with lime juice and sprinkle with salt and pepper.
- Layer rice on a plate, followed by slices of chicken, and top with avocado for a great presentation.
Notes
For the best flavor, let the chicken marinate longer and use ripe avocados. Consider adding black beans or corn to the rice mixture for a twist.
