Delicious and satisfying bowls combining savory salmon with a sweet and spicy honey sriracha sauce.
Ingredients

- 4 salmon filets (4–6 ounces each)
- 3 tablespoons low sodium soy sauce or tamari
- 2 tablespoons honey
- 2 tablespoons sriracha
- 2 teaspoons minced garlic
- 2 cups cooked white rice
- 1 avocado, sliced
- 1 cucumber, sliced
- 1 cup cooked edamame
- 1/2 cup sriracha mayo
Instructions
- Cut the salmon into 1-inch cubes.
- In a mixing bowl, whisk together the soy sauce, honey, sriracha, garlic, and a bit of water.
- Marinate the salmon cubes in this mixture for at least 20 minutes.
- Heat a skillet over medium heat with a little oil and cook the marinated salmon for 2–3 minutes on each side until crispy.
- Add the reserved marinade to the skillet and cook until it thickens.
- Assemble your bowls starting with a base of rice. Top with the cooked salmon, sliced avocado, cucumber, and edamame, then drizzle with sriracha mayo.
Notes
For added crunch and flavor, consider topping with sesame seeds or chopped green onions. You can replace white rice with brown rice or quinoa for a healthier option.
