Comforting and flavorful quesadillas filled with tender chicken and melty cheese, drizzled with hot honey BBQ sauce.

- 2 cups cooked chicken, shredded
- 1 cup hot honey BBQ sauce
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar or a blend)
- Sour cream, for serving
- Salsa, for serving
- Olive oil, for grilling
Instructions
- Mix the shredded chicken with hot honey BBQ sauce until coated.
- Heat a skillet over medium heat and add a little olive oil.
- Place one tortilla in the skillet and layer half of it with a portion of the chicken mixture and shredded cheese.
- Fold the tortilla in half and cook for about 3-4 minutes on each side, or until golden brown and cheese is melted.
- Repeat with the remaining tortillas and filling.
- Cut into wedges and serve with sour cream and salsa.
Notes
Rotisserie chicken can save prep time. Pepper Jack cheese adds a kick. Store leftovers in an airtight container.
