- 1.5 pounds Chicken Thighs
- 3 cloves Garlic
- 2 pounds Yukon Gold Potatoes
- to taste Salt
- to taste Pepper
- 2 cups Heavy Cream
- 1 cup Mozzarella Cheese
- 1 tablespoon Thyme
- to taste Parsley
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken thighs with salt and pepper.
- Heat some oil in a large skillet over medium heat. Add the chicken thighs skin side down, and cook until golden brown (about 5-7 minutes). Flip the chicken and cook for another 5 minutes. Remove and set aside.
- Add minced garlic to the same skillet and cook for about 1 minute until fragrant.
- Slice the Yukon Gold potatoes into thin rounds and add them to the skillet. Stir well to coat with garlic.
- Pour in the heavy cream, add thyme, and mix until combined.
- Layer the potatoes in a large baking dish, then place the chicken thighs on top.
- Pour the cream and potato mixture over the chicken and sprinkle mozzarella cheese on top.
- Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes or until cheese is bubbly and golden.
- Let cool for a few minutes and garnish with parsley before serving.
Notes
For extra flavor, marinate the chicken in heavy cream and spices for a few hours before cooking. Add breadcrumbs on top before the last 15 minutes for added crunch.
