Description

A moist and delicious bread that combines rich chocolate flavor with zucchini for a sweet treat that everyone will love.


Ingredients

  • 1 medium zucchini, grated
  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper for easy removal.
  2. Grate one medium zucchini (about 1 cup) and place it in a clean kitchen towel. Squeeze out excess moisture, then set it aside.
  3. Whisk together 1 ½ cups of all-purpose flour, ½ cup of unsweetened cocoa powder, 1 teaspoon of baking soda, ½ teaspoon of baking powder, and ½ teaspoon of salt in a large bowl.
  4. Beat together 1 cup of granulated sugar, ½ cup of brown sugar, and ½ cup of vegetable oil in another bowl. Add in 2 large eggs and 1 teaspoon of vanilla extract, mixing until well-combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid overmixing!
  6. Fold in the grated zucchini and 1 cup of semi-sweet chocolate chips until evenly distributed throughout the batter.
  7. Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
  8. Place the pan in the oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, tent it with foil.
  9. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Make sure to squeeze all the excess moisture out of the zucchini to prevent sogginess. Customize by adding nuts or dried fruit.
