- 1 medium zucchini, grated
- 1 ½ cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup granulated sugar
- ½ cup brown sugar
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper for easy removal.
- Grate one medium zucchini (about 1 cup) and place it in a clean kitchen towel. Squeeze out excess moisture, then set it aside.
- Whisk together 1 ½ cups of all-purpose flour, ½ cup of unsweetened cocoa powder, 1 teaspoon of baking soda, ½ teaspoon of baking powder, and ½ teaspoon of salt in a large bowl.
- Beat together 1 cup of granulated sugar, ½ cup of brown sugar, and ½ cup of vegetable oil in another bowl. Add in 2 large eggs and 1 teaspoon of vanilla extract, mixing until well-combined.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid overmixing!
- Fold in the grated zucchini and 1 cup of semi-sweet chocolate chips until evenly distributed throughout the batter.
- Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
- Place the pan in the oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, tent it with foil.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Make sure to squeeze all the excess moisture out of the zucchini to prevent sogginess. Customize by adding nuts or dried fruit.
