Description

A comforting and creamy garlic Parmesan chicken dish made effortlessly in the Instant Pot.


Ingredients

Scale
  • 2 lbs chicken thighs or breasts
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Pasta or mashed potatoes, for serving

Instructions

  1. Turn on the Instant Pot and select the ‘Sauté’ mode. Heat the olive oil and add the minced garlic, sautéing for 1-2 minutes until fragrant.
  2. Season the chicken with salt, pepper, and Italian seasoning, then add it to the pot, allowing it to brown lightly.
  3. Pour in the chicken broth and lock the lid. Select ‘Manual’ mode and cook on high pressure for 10 minutes.
  4. After cooking, do a quick release of the pressure.
  5. Remove the chicken and set aside. Stir in the heavy cream and Parmesan cheese into the pot, mixing until smooth and creamy.
  6. Return the chicken to the pot, coating it fully with the rich and velvety sauce.
  7. Serve over pasta or mashed potatoes.

Notes

For a lighter sauce, reduce the heavy cream by half or substitute with Greek yogurt. Leftovers can be stored for up to 3 days in the fridge.
