Ingredients

- 2 lbs chicken thighs or breasts
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Pasta or mashed potatoes, for serving
Instructions
- Turn on the Instant Pot and select the ‘Sauté’ mode. Heat the olive oil and add the minced garlic, sautéing for 1-2 minutes until fragrant.
- Season the chicken with salt, pepper, and Italian seasoning, then add it to the pot, allowing it to brown lightly.
- Pour in the chicken broth and lock the lid. Select ‘Manual’ mode and cook on high pressure for 10 minutes.
- After cooking, do a quick release of the pressure.
- Remove the chicken and set aside. Stir in the heavy cream and Parmesan cheese into the pot, mixing until smooth and creamy.
- Return the chicken to the pot, coating it fully with the rich and velvety sauce.
- Serve over pasta or mashed potatoes.
Notes
For a lighter sauce, reduce the heavy cream by half or substitute with Greek yogurt. Leftovers can be stored for up to 3 days in the fridge.
