- 1 pound Ground Chicken
- 1 cup Breadcrumbs
- 1/2 cup Parmesan Cheese
- 2 cloves Garlic, minced
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1/4 cup Fresh Parsley
- 1/4 cup Butter
- 1/4 cup Lemon Juice
- 2 tablespoons Capers
- 1/4 cup Fresh Parsley, for garnish
Instructions
- Mix the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, salt, pepper, and parsley in a large bowl until well combined.
- Form small meatballs, about 1 inch in diameter, and set aside.
- Melt the butter in a large skillet over medium heat. Add the meatballs and cook until they are golden brown on all sides, about 10 minutes.
- Remove the meatballs and set them aside on a plate.
- Add the lemon juice and capers to the same skillet. Stir well to combine and let it simmer for about 2 minutes.
- Return the meatballs to the skillet and cook for an additional 5 minutes, allowing them to soak in the sauce.
- Serve hot, garnished with fresh parsley.
Notes
For extra flavor, consider adding Italian seasoning or crushed red pepper flakes. If the mixture feels too dry, add a little chicken broth.
