Description

Chicken Piccata Meatballs are a delightful twist on a classic dish, featuring tender meatballs in a zesty lemon sauce.


Ingredients

  • 1 pound Ground Chicken
  • 1 cup Breadcrumbs
  • 1/2 cup Parmesan Cheese
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1/4 cup Fresh Parsley
  • 1/4 cup Butter
  • 1/4 cup Lemon Juice
  • 2 tablespoons Capers
  • 1/4 cup Fresh Parsley, for garnish

Instructions

  1. Mix the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, salt, pepper, and parsley in a large bowl until well combined.
  2. Form small meatballs, about 1 inch in diameter, and set aside.
  3. Melt the butter in a large skillet over medium heat. Add the meatballs and cook until they are golden brown on all sides, about 10 minutes.
  4. Remove the meatballs and set them aside on a plate.
  5. Add the lemon juice and capers to the same skillet. Stir well to combine and let it simmer for about 2 minutes.
  6. Return the meatballs to the skillet and cook for an additional 5 minutes, allowing them to soak in the sauce.
  7. Serve hot, garnished with fresh parsley.

Notes

For extra flavor, consider adding Italian seasoning or crushed red pepper flakes. If the mixture feels too dry, add a little chicken broth.
