Instructions
- Pour 1 can of coconut milk into a medium bowl and add enough water to reach a total of 2 cups of liquid.
- Whisk together the coconut milk mixture with lemon zest, fresh lemon juice, maple syrup, and turmeric until smooth and well blended.
- Stir in the chia seeds, ensuring they’re evenly distributed throughout the mixture.
- Let the mixture sit for 20 minutes, stirring every 5 minutes until it thickens.
- Sample your pudding and adjust sweetness if desired.
- Cover and place in the refrigerator overnight, or enjoy after just 30 minutes.
- Spoon the pudding into bowls or jars and garnish with your favorite toppings.
- Keep any leftovers in a sealed jar in the refrigerator for up to 5 days.
Notes
Chia seeds must be stirred well into the mixture to prevent clumping. Blend the mixture for a smoother texture before adding chia seeds.
