Description
Delicious and healthy Greek Chicken Tzatziki Bowls featuring grilled chicken, cool tzatziki sauce, and fresh vegetables.
Ingredients
Scale
- 1 lb chicken breasts (boneless and skinless)
- 2 tbsp olive oil (for marinating)
- 2 tbsp lemon juice (freshly squeezed)
- 2 cloves garlic (minced)
- 1 tsp salt (to taste)
- 1/2 tsp pepper (to taste)
- 1 cup Greek yogurt
- 1 medium cucumber (grated)
- 2 tbsp fresh dill (chopped)
- 1 cup cherry tomatoes (halved)
- 1/2 small red onion (thinly sliced)
- 1/2 cup feta cheese (crumbled, optional)
Instructions
- In a bowl, mix the olive oil, lemon juice, minced garlic, salt, and pepper.
- Add the chicken breasts to the marinade. Let them sit for at least 30 minutes to absorb the flavors.
- While the chicken marinates, prepare the tzatziki sauce. In another bowl, combine Greek yogurt, grated cucumber, chopped dill, and a pinch of salt. Mix well and set aside.
- Preheat a grill or grill pan over medium heat. Cook the marinated chicken for about 6-7 minutes on each side or until fully cooked.
- Once cooked, let the chicken rest for a few minutes before slicing it into strips.
- In a bowl, place a generous scoop of tzatziki sauce as a base. Add sliced chicken on top, then sprinkle with halved cherry tomatoes, sliced red onion, and crumbled feta cheese if desired. Serve warm with additional tzatziki on the side for dipping.
Notes
Store leftovers in airtight containers in the refrigerator for up to 3 days. For extra flavor, marinate the chicken for a few hours or overnight.
