- 6 hard-boiled eggs
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 onion, finely chopped
- 2–3 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 2 tomatoes, pureed
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan over medium heat.
- Add mustard seeds and allow them to splutter.
- Add the chopped onions and green chilies. Sauté until the onions turn golden brown.
- Stir in the ginger-garlic paste and cook for 1-2 minutes.
- Add the tomato puree and cook until the oil starts to separate from the mixture.
- Mix in turmeric powder, red chili powder, and salt. Cook for 2-3 minutes.
- Add the hard-boiled eggs, gently coating them with the sauce.
- Sprinkle garam masala on top and simmer for a few minutes.
- Garnish with fresh coriander leaves.
Notes
Use fresh spices for the best flavor. Adjust the number of green chilies based on your heat preference.
