Description

A unique twist on the classic Eggs Benedict featuring creamy avocado, spicy chorizo, and grilled butternut squash, topped with chipotle hollandaise.


Ingredients

  • 1 medium butternut squash (peeled and sliced into 1/2 inch thick slices)
  • 1 tbsp olive oil (for grilling)
  • 1 large avocado (smashed)
  • 6 oz ground chorizo (approx. 5 chorizo sausage, removed from casings)
  • 4 large eggs (for poaching)
  • 1 tsp white vinegar (for poaching eggs)
  • 1 jalapeño (sliced)
  • 1 tbsp cilantro (chopped, for garnish)
  • 2 egg yolks (for hollandaise)
  • 1/4 tsp salt (for hollandaise)
  • 1 tbsp lime juice (for hollandaise)
  • 1 tbsp chopped chipotle pepper in adobo (or 1 tsp chipotle powder)
  • 1/4 cup hot melted butter (or ghee for Paleo/Whole30)

Instructions

  1. Peel the butternut squash and slice it into 1/2 inch thick rounds. Brush both sides with olive oil for that perfect grill sear.
  2. Heat a grill or grill pan over medium-high. Cook the squash slices for 5-6 minutes per side until golden brown and tender.
  3. Transfer the grilled squash to a low-heat oven to stay warm while you prepare the rest of the ingredients.
  4. In a skillet, cook the ground chorizo over medium heat, breaking it apart with a fork until it’s crispy and crumbly.
  5. In a pot, bring water mixed with white vinegar to a gentle boil. Create a whirlpool and carefully crack an egg into it, cooking for 4 minutes for a perfectly runny yolk. Repeat with remaining eggs.
  6. In a tall measuring jug, combine egg yolks, salt, lime juice, and chipotle pepper. Blend with an immersion blender, slowly drizzling in melted butter to create a rich, smooth hollandaise sauce.
  7. On a plate, layer the grilled butternut squash. Top with smashed avocado, crispy chorizo, and a poached egg. Drizzle with hollandaise and finish with sliced jalapeños and fresh cilantro.

Notes

Best served warm. You can also enjoy it with a side of fresh fruit or a simple salad.
