Ingredients

  • 1 lb large shrimp (peeled and deveined)
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp salt (plus to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 1 cup frozen corn (thawed)
  • 1/2 cup red onion (diced)
  • 1/4 cup cilantro (chopped)
  • 1 jalapeño (seeded and minced, optional)
  • 1 lime (juiced)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp lemon juice
  • 1 clove garlic (minced)
  • 1 avocado (sliced or mashed)
  • Sesame seeds (for garnish)
  • Green onions (chopped, for garnish)

Instructions

  1. Combine shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne (if using) until evenly coated.
  2. Mix thawed corn, diced red onion, minced jalapeño (if desired), chopped cilantro, lime juice, and a pinch of salt to make a zesty salsa.
  3. Heat your grill to medium. Cook the shrimp for 2–3 minutes on each side until they turn pink.
  4. Blend mayonnaise, sour cream, chopped cilantro, lemon juice, minced garlic, salt, and pepper to create a creamy garlic sauce.
  5. Layer the zesty corn salsa, grilled shrimp, and sliced or mashed avocado in serving bowls.
  6. Pour the creamy garlic sauce generously over the assembled shrimp bowl.
  7. Sprinkle sesame seeds and chopped green onions on top for a delightful crunch.

Notes
