Description

A vibrant and colorful pasta salad perfect for summer gatherings, combining bow tie pasta with fresh vegetables and a zesty homemade dressing.


Ingredients

  • 12 oz bow tie pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/4 cup fresh basil, chopped
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the bow tie pasta according to package instructions, then drain and rinse under cold water to stop the cooking process.
  2. Combine the cooked pasta with the halved cherry tomatoes, diced cucumber, diced bell pepper, finely chopped red onion, sliced black olives, and fresh basil in a large bowl.
  3. Whisk together the olive oil, red wine vinegar, salt, and pepper in a small bowl until well combined.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Chill the pasta salad in the refrigerator for at least 30 minutes before serving.

Notes

For best taste, let the salad chill before serving to allow the flavors to meld together. Reserve some dressing for leftovers.
