- 16 ounces penne pasta
- 4 ounces ham
- 4 ounces pepperoni
- 4 ounces salami
- 4 ounces provolone cheese
- 1 pint grape tomatoes
- 1/2 cup sliced pepperoncini peppers
- 1/2 red onion
- 1/2 cup mayonnaise
- 2 tablespoons red wine vinegar
- 2 teaspoons minced garlic
- 1 teaspoon sugar
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated parmesan cheese
Instructions
- Cook the penne pasta according to package instructions until it is al dente. Drain it and rinse with cold water; set aside.
- Whisk together mayonnaise, red wine vinegar, minced garlic, sugar, oregano, salt, black pepper, and Parmesan cheese until smooth in a mixing bowl.
- Chop the ham, pepperoni, salami, and provolone into bite-sized pieces.
- Combine the cooked pasta with the meats, cheese, tomatoes, pepperoncini peppers, and diced onion in a large bowl.
- Pour the dressing over the salad mixture and toss until everything is evenly coated.
Notes
Leftovers can be stored in an airtight container in the refrigerator for 3 to 5 days. If the pasta absorbs too much dressing, add a bit more mayonnaise or vinegar before serving.
