Description

A delicious and hearty Italian-style pasta salad with meats, cheese, and fresh vegetables, perfect for picnics and potlucks.


Ingredients

  • 16 ounces penne pasta
  • 4 ounces ham
  • 4 ounces pepperoni
  • 4 ounces salami
  • 4 ounces provolone cheese
  • 1 pint grape tomatoes
  • 1/2 cup sliced pepperoncini peppers
  • 1/2 red onion
  • 1/2 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 2 teaspoons minced garlic
  • 1 teaspoon sugar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated parmesan cheese

Instructions

  1. Cook the penne pasta according to package instructions until it is al dente. Drain it and rinse with cold water; set aside.
  2. Whisk together mayonnaise, red wine vinegar, minced garlic, sugar, oregano, salt, black pepper, and Parmesan cheese until smooth in a mixing bowl.
  3. Chop the ham, pepperoni, salami, and provolone into bite-sized pieces.
  4. Combine the cooked pasta with the meats, cheese, tomatoes, pepperoncini peppers, and diced onion in a large bowl.
  5. Pour the dressing over the salad mixture and toss until everything is evenly coated.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 3 to 5 days. If the pasta absorbs too much dressing, add a bit more mayonnaise or vinegar before serving.
