Instructions
- Browning the sausage: In a large pot over medium heat, cook the Italian sausage until nicely browned and cooked through, then remove and set aside.
- Sautéing the vegetables: In the same pot, add chopped onion, diced carrots, and diced celery. Sauté for about 5 minutes.
- Adding garlic: Stir in minced garlic and cook for an additional minute.
- Building the soup base: Pour in diced tomatoes, chicken broth, oregano, basil, salt, and pepper. Bring to a boil.
- Simmering: Reduce heat, let the soup simmer for 15 minutes.
- Finishing touches: Stir in cooked sausage and chopped kale or spinach, cooking for an additional 5 minutes.
