Description

A warm and hearty Italian sausage soup loaded with vegetables, perfect for comforting family gatherings.


Ingredients

  • 1 lb Italian sausage
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups kale or spinach, chopped
  • Parmesan cheese, for serving
  • Crusty bread, for serving

Instructions

  1. Browning the sausage: In a large pot over medium heat, cook the Italian sausage until nicely browned and cooked through, then remove and set aside.
  2. Sautéing the vegetables: In the same pot, add chopped onion, diced carrots, and diced celery. Sauté for about 5 minutes.
  3. Adding garlic: Stir in minced garlic and cook for an additional minute.
  4. Building the soup base: Pour in diced tomatoes, chicken broth, oregano, basil, salt, and pepper. Bring to a boil.
  5. Simmering: Reduce heat, let the soup simmer for 15 minutes.
  6. Finishing touches: Stir in cooked sausage and chopped kale or spinach, cooking for an additional 5 minutes.
  7. Serving up the comfort: Serve hot, garnished with Parmesan cheese alongside warm, crusty bread.
