- 1 can coconut milk

Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onion, garlic, ginger, and bell pepper, and sauté until soft.

- Pour in the coconut milk, and add thyme, salt, and pepper.
- Cover and simmer for about 15-20 minutes, stirring occasionally, until the cabbage is tender.
