Description

Juicy Korean BBQ meatballs served with a spicy mayo dip, perfect for snacks, appetizers, or main dishes.


Ingredients

  • 1 lb (450g) ground beef or ground chicken
  • ½ cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon brown sugar
  • 1 tablespoon sesame oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 green onions, finely chopped
  • ¼ cup soy sauce (for the sauce)
  • 2 tablespoons honey or brown sugar (for the sauce)
  • 1 tablespoon gochujang (for the sauce)
  • 1 tablespoon rice vinegar (for the sauce)
  • 1 tablespoon sesame oil (for the sauce)
  • 1 teaspoon garlic, minced (for the sauce)
  • 1 teaspoon ginger, minced (for the sauce)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (to thicken the sauce)
  • ½ cup mayonnaise (for the dip)
  • 1 tablespoon gochujang (for the dip)
  • 1 tablespoon lime juice (for the dip)
  • 1 teaspoon honey (for the dip)
  • ½ teaspoon garlic powder (for the dip)
  • Sesame seeds (for garnish)
  • Chopped green onions (for garnish)

Instructions

  1. Combine ground meat, panko breadcrumbs, egg, minced garlic, grated ginger, soy sauce, gochujang, brown sugar, sesame oil, salt, black pepper, and green onions in a large mixing bowl. Mix gently until everything is combined.
  2. Form the mixture into 1 to 1.5-inch meatballs and place them on a baking sheet.
  3. Heat a skillet over medium heat and cook the meatballs until they are browned and cooked through.
  4. Whisk together soy sauce, honey (or brown sugar), gochujang, rice vinegar, sesame oil, minced garlic, and ginger in a separate bowl for the sauce.
  5. Mix mayonnaise with gochujang, lime juice, honey, and garlic powder until smooth for the spicy mayo dip.

Notes

Do not over-mix the meatball mixture to avoid toughness. Adjust gochujang levels for your spice preference.
