Ingredients

Scale
  • 1 chuck roast
  • 2 tablespoons gochujang
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 onion, sliced
  • 2 carrots, chopped
  • 2 cups beef broth
  • 2 tablespoons brown sugar
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Season the chuck roast with salt and pepper.
  2. Sear the roast in a large pot over medium-high heat until browned on all sides.
  3. Sauté the sliced onion and minced garlic until softened.
  4. Mix the gochujang, soy sauce, brown sugar, and beef broth into the pot.
  5. Combine the roast with the sauce and add the chopped carrots.
  6. Simmer on low heat for 3-4 hours until the meat is fork-tender.
  7. Serve the roast with sauce drizzled on top and garnish with green onions.

Notes

For extra heat, adjust the amount of gochujang to your preference. Serve with rice or mashed potatoes to soak up the sauce.
