Description

A fresh and tasty dish that combines the bright flavors of lemon with the crisp texture of asparagus, topped with creamy burrata cheese.

Ingredients

Scale
  • 8 oz pasta (e.g., spaghetti or fettuccine)
  • 1 bunch of asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Salt and pepper to taste
  • ¼ cup toasted pine nuts
  • Burrata cheese, for topping
  • Fresh parsley, for garnish

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and asparagus, cooking until asparagus is tender, about 5-7 minutes.
  3. Stir in lemon zest and juice, then season with salt and pepper.
  4. Add the cooked pasta to the skillet, tossing until well combined.
  5. Serve topped with burrata cheese, toasted pine nuts, and fresh parsley.

Notes

For best results, do not overcook the asparagus; it should remain slightly crunchy.
