A delightful fusion of lemon zest and Cajun chicken bites served over creamy fettuccine Alfredo.
Ingredients

- 1 lb chicken breast, diced
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- Zest of 1 lemon
- Salt and pepper to taste
- 8 oz fettuccine or pasta of choice
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons fresh herbs (parsley, basil, or thyme), chopped
Instructions
- Toss the chicken in a bowl with Cajun seasoning, lemon zest, salt, and pepper until well-coated.
- Heat olive oil in a skillet over medium heat. Add the seasoned chicken and cook until golden brown, about 7-10 minutes, ensuring it’s cooked through.
- Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta water.
- In another pan, melt a tablespoon of butter and sauté the minced garlic until fragrant, about 1 minute.
- Add the heavy cream to the garlic pan and stir in the grated Parmesan cheese. Cook until the sauce thickens slightly, around 3-5 minutes, then mix in the cooked pasta and fresh herbs. If needed, add a splash of reserved pasta water to achieve the desired consistency.
- Serve the Cajun chicken bites over the creamy Alfredo pasta, finishing with a sprinkle of additional fresh herbs.
