- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease a square baking pan.
- Mix together the flour, granulated sugar, and salt until well combined.
- Cut in the softened butter until the mixture resembles coarse crumbs.
- Press half of the crumb mixture firmly into the bottom of the prepared pan to create a solid crust.
- Whisk together the egg, fresh lemon juice, lemon zest, and baking powder until smooth.
- Pour the lemon mixture evenly over the crust in the pan.
- Sprinkle the remaining crumb mixture on top of the lemon layer.
- Bake for 25-30 minutes or until the top is golden brown and a toothpick inserted comes out clean.
- Let the bars cool completely before dusting with powdered sugar just prior to serving.
Notes
For extra flavor, try adding fresh blueberries or raspberries to the filling.
