Description

Delightful Lemon Crumb Bars with a crumbly base and a luscious, tangy lemon filling, perfect for summer gatherings.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a square baking pan.
  2. Mix together the flour, granulated sugar, and salt until well combined.
  3. Cut in the softened butter until the mixture resembles coarse crumbs.
  4. Press half of the crumb mixture firmly into the bottom of the prepared pan to create a solid crust.
  5. Whisk together the egg, fresh lemon juice, lemon zest, and baking powder until smooth.
  6. Pour the lemon mixture evenly over the crust in the pan.
  7. Sprinkle the remaining crumb mixture on top of the lemon layer.
  8. Bake for 25-30 minutes or until the top is golden brown and a toothpick inserted comes out clean.
  9. Let the bars cool completely before dusting with powdered sugar just prior to serving.

Notes

For extra flavor, try adding fresh blueberries or raspberries to the filling.
