- 1 cup sugar
- 2 large eggs
- 1/2 cup sour cream
- 1/4 cup lime juice
- 1 tbsp lime zest
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar

- 1/2 cup lime juice (for glaze)
- 1/4 cup sugar (for glaze)
- 1 tbsp cornstarch (for glaze)
- Lime slices and zest for garnish
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- Beat the cream cheese and sugar until smooth. Add the eggs, sour cream, lime juice, and lime zest, mixing well.
- Pour the cheesecake batter into the prepared pan and bake for 50-60 minutes, or until set but slightly jiggly in the center.
- Remove from the oven and let cool completely.
- Whip the heavy cream with powdered sugar and vanilla until stiff peaks form. Gently fold this into the cooled cheesecake.
- Refrigerate for at least 4 hours or overnight.
- Combine lime juice, sugar, and cornstarch in a saucepan for the glaze. Cook over medium heat until thickened, then allow to cool.
- Pour the lime glaze over the cheesecake before serving.
- Garnish with lime slices and zest. Enjoy!
