- 4 large russet potatoes
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- 1 cup guacamole
- 1 cup diced tomatoes
- 1 cup chopped green onions
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes thoroughly, pierce them multiple times with a fork, drizzle with olive oil, and sprinkle with salt. Bake for about 45 minutes or until tender.
- Heat a skillet over medium heat and cook the ground beef until browned, draining the excess fat, then add taco seasoning and water; let it simmer.
- Remove the cooked potatoes from the oven, cut them in half, and scoop out a bit of the flesh.
- Fill each potato half with the seasoned beef and top with shredded cheese.
- Return to the oven and bake for an additional 10 minutes or until cheese is melted.
- Serve with sour cream, guacamole, diced tomatoes, and green onions, letting everyone personalize their bowls.
