Description

Ingredients

  • 4 large russet potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 cup guacamole
  • 1 cup diced tomatoes
  • 1 cup chopped green onions
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes thoroughly, pierce them multiple times with a fork, drizzle with olive oil, and sprinkle with salt. Bake for about 45 minutes or until tender.
  3. Heat a skillet over medium heat and cook the ground beef until browned, draining the excess fat, then add taco seasoning and water; let it simmer.
  4. Remove the cooked potatoes from the oven, cut them in half, and scoop out a bit of the flesh.
  5. Fill each potato half with the seasoned beef and top with shredded cheese.
  6. Return to the oven and bake for an additional 10 minutes or until cheese is melted.
  7. Serve with sour cream, guacamole, diced tomatoes, and green onions, letting everyone personalize their bowls.
