Description

A heartwarming Mediterranean Lemon Chicken Soup with bright flavors from lemon, tender chicken, and fresh vegetables.


Ingredients

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • Juice of 1 lemon
  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, carrots, and celery, and sauté until softened.
  2. Add the chicken breast and cook until browned.
  3. Pour in chicken broth and bring to a boil.
  4. Stir in lemon juice and orzo pasta, and simmer until pasta is cooked.
  5. Add spinach and cook until wilted.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.

Notes

This soup keeps well in the fridge for up to 3 days. For a vegetarian version, swap chicken for chickpeas and use vegetable broth.
