- 2 chicken breasts
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- Juice of 1 lemon
- 1 cup orzo pasta
- 2 cups fresh spinach
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, carrots, and celery, and sauté until softened.
- Add the chicken breast and cook until browned.
- Pour in chicken broth and bring to a boil.
- Stir in lemon juice and orzo pasta, and simmer until pasta is cooked.
- Add spinach and cook until wilted.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
This soup keeps well in the fridge for up to 3 days. For a vegetarian version, swap chicken for chickpeas and use vegetable broth.
