Description

A refreshing Mediterranean salad with pasta, chickpeas, and feta cheese, perfect for a light lunch or side dish.


Ingredients

  • 8 ounces pasta (fusilli or rotini)
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, chickpeas, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving for the flavors to meld.

Notes

Serve chilled or at room temperature. Garnish with extra feta cheese or fresh herbs like parsley for added freshness.
