Description

A refreshing pasta salad with vibrant flavors inspired by traditional Mexican street corn, perfect for gatherings or as a side dish.


Ingredients

  • 8 oz pasta (fusilli or macaroni)
  • 1 cup frozen sweet corn (thawed)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 cup diced red onion
  • 1/2 cup chopped cilantro
  • Salt and pepper to taste
  • 2 oz cotija cheese (crumbled) for topping

Instructions

  1. Cook pasta according to package instructions; drain and let cool.
  2. In a large bowl, combine the mayonnaise, sour cream, lime juice, chili powder, and salt and pepper.
  3. Add the cooked pasta, corn, red onion, and cilantro to the bowl; mix until combined.
  4. Adjust seasoning as needed.
  5. Serve chilled, topped with crumbled cotija cheese.

Notes

For added crunch, consider adding diced bell peppers or jalapeños. Let the pasta cool completely before mixing to prevent the dressing from becoming watery.
