Description

A delicious and satisfying chicken dish topped with barbecue sauce, Monterey Jack cheese, and fresh ingredients, perfect for any occasion.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup barbecue sauce
  • 1 cup shredded Monterey Jack cheese
  • 1 cup diced tomatoes
  • 1/2 cup sliced green onions
  • 1/2 cup cooked bacon, crumbled
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat.
  3. Sear chicken: Add the chicken to the skillet and sear for about 4-5 minutes on each side until golden brown.
  4. Add barbecue sauce: Pour the barbecue sauce over the chicken breasts, ensuring they are well-coated.
  5. Transfer to baking dish: Transfer the seared chicken breasts to a baking dish.
  6. Layer toppings: Sprinkle the shredded Monterey Jack cheese, diced tomatoes, and crumbled bacon on top of the chicken.
  7. Bake: Place the baking dish in the oven and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.
  8. Garnish: Remove from the oven and sprinkle with sliced green onions and fresh cilantro if desired.
  9. Serve: Let the chicken rest for a few minutes before serving to allow the juices to redistribute.

Notes

For extra flavor, marinate the chicken breasts in BBQ sauce for an hour before cooking. You can also switch up the cheese for a different flavor.
