Ingredients

  • 1 pound sausage (Italian or breakfast sausage)
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 1 cup shredded Monterey Jack cheese
  • 1 pie crust (store-bought or homemade)
  • 4 eggs
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the sausage in a skillet over medium heat until browned.
  3. Add the diced onions and bell peppers to the skillet and cook until softened.
  4. Whisk together the eggs, milk, salt, and pepper in a bowl.
  5. Assemble the pie by spreading the sausage mixture in the crust and topping with cheese.
  6. Pour the egg mixture over the sausage and cheese.
  7. Bake the pie for 30-35 minutes until the eggs are set and the top is golden.
