Ingredients

  • 3/4 cup tomato sauce
  • 1/3 cup zucchini (finely diced into 1/4-inch pieces)
  • 1/2 cup spinach
  • 3/4 cup cottage cheese
  • 1/4 cup cherry tomatoes (halved lengthwise)
  • 1/4 teaspoon garlic powder
  • Fresh basil

Instructions

  1. Begin by dicing the zucchini and halving the cherry tomatoes lengthwise.
  2. Place both bread slices on your work surface.
  3. Combine the tomato sauce with the diced zucchini and garlic powder in a small bowl.
  4. Spread the tomato-zucchini mixture evenly across both bread slices.
  5. Top each slice with half of the spinach.
  6. Dollop and gently spread half of the cottage cheese over the spinach on each slice.
  7. Arrange the halved cherry tomatoes on top.
  8. Preheat your air fryer to 390°F.
  9. Cook the assembled toast slices in the air fryer for 8 minutes.
  10. Remove the toast from the air fryer and top with fresh basil.
