Instructions
- Preheat the oven to 325°F (160°C).
- Combine graham cracker crumbs, 1/2 cup sugar, and melted butter in a mixing bowl. Press the mixture into the bottom of a 9-inch springform pan.
- Beat the cream cheese in a large bowl until smooth. Gradually add 1 cup sugar and vanilla, mixing until well combined.
- Add eggs one at a time, mixing on low speed until just blended.
- Pour the batter over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set and the edges are lightly browned.
- Remove from the oven and let cool at room temperature, then refrigerate for at least 4 hours before serving.
- Top with sour cream for an extra creamy finish if desired.
