Description

A delightful one-pan dish combining Mediterranean flavors with baked feta and eggs, perfect for breakfast or brunch.


Ingredients

  • Feta cheese
  • Cherry tomatoes
  • Fresh spinach
  • Garlic
  • Herbs (such as oregano or basil)
  • Eggs
  • Olive oil
  • Salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place feta cheese, cherry tomatoes, and spinach in a baking dish.
  3. Drizzle with olive oil and sprinkle with minced garlic and herbs.
  4. Bake in the oven for about 15 minutes, or until the tomatoes are blistered and feta is slightly golden.
  5. Remove from the oven and make small wells in the mixture for the eggs.
  6. Crack the eggs into the wells and season with salt and pepper.
  7. Return to the oven and bake for an additional 10-15 minutes, or until the egg whites are set but the yolks are still soft.
  8. Serve hot and enjoy!
