Description

A simple yet soul-satisfying dish featuring marinated chicken breasts roasted with cherry tomatoes and fresh basil, all in one pan.


Ingredients

Scale
  • 4 chicken breasts
  • 1/2 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups cherry tomatoes
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk together balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper in a large mixing bowl.
  3. Marinate the chicken breasts in the marinade for 10-15 minutes.
  4. Arrange the marinated chicken in a large oven-safe skillet and top with cherry tomatoes.
  5. Drizzle any leftover marinade over the top.
  6. Bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Garnish with fresh basil before serving.

Notes

Serve with quinoa, mashed potatoes, or a salad. Store leftovers in an airtight container for up to 3 days.
