- 4 chicken breasts
- 1/2 cup balsamic vinegar
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups cherry tomatoes
- 1/4 cup fresh basil, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Whisk together balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper in a large mixing bowl.
- Marinate the chicken breasts in the marinade for 10-15 minutes.
- Arrange the marinated chicken in a large oven-safe skillet and top with cherry tomatoes.
- Drizzle any leftover marinade over the top.
- Bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Garnish with fresh basil before serving.
Notes
Serve with quinoa, mashed potatoes, or a salad. Store leftovers in an airtight container for up to 3 days.
