Description

A quick and easy one pan meal combining chicken, rice, and a flavorful honey BBQ sauce, perfect for busy weekdays.


Ingredients

Scale
  • 2 pounds of chicken thighs, boneless and skinless
  • 1 cup of rice (jasmine or long grain)
  • 1 cup of chicken broth
  • 1/2 cup of honey
  • 1/2 cup of BBQ sauce
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Start by seasoning the chicken thighs with garlic powder, onion powder, salt, and pepper.
  2. In a large pan, heat olive oil over medium heat. Add the chicken and cook until browned on both sides, about 5 minutes per side.
  3. Once the chicken is cooked, remove it from the pan and set it aside.
  4. In the same pan, add the rice and toast it for about 2 minutes.
  5. Pour the chicken broth into the pan, along with the honey and BBQ sauce. Stir well to combine.
  6. Place the chicken back into the pan. Make sure it is partly submerged in the liquid.
  7. Cover the pan and reduce the heat to low. Let it cook for about 20-25 minutes, or until the rice is tender and has absorbed the liquid.
  8. Once done, fluff the rice with a fork and serve hot.

Notes

Serve with steamed vegetables or a fresh salad. Garnish with green onions for added flavor.
