Description
A quick and easy one pan meal combining chicken, rice, and a flavorful honey BBQ sauce, perfect for busy weekdays.
Ingredients

- 2 pounds of chicken thighs, boneless and skinless
- 1 cup of rice (jasmine or long grain)
- 1 cup of chicken broth
- 1/2 cup of honey
- 1/2 cup of BBQ sauce
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- Chopped green onions for garnish (optional)
Instructions
- Start by seasoning the chicken thighs with garlic powder, onion powder, salt, and pepper.
- In a large pan, heat olive oil over medium heat. Add the chicken and cook until browned on both sides, about 5 minutes per side.
- Once the chicken is cooked, remove it from the pan and set it aside.
- In the same pan, add the rice and toast it for about 2 minutes.
- Pour the chicken broth into the pan, along with the honey and BBQ sauce. Stir well to combine.
- Place the chicken back into the pan. Make sure it is partly submerged in the liquid.
- Cover the pan and reduce the heat to low. Let it cook for about 20-25 minutes, or until the rice is tender and has absorbed the liquid.
- Once done, fluff the rice with a fork and serve hot.
Notes
Serve with steamed vegetables or a fresh salad. Garnish with green onions for added flavor.
