Ingredients

  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 cup cheese (such as cream cheese or mozzarella)
  • 1/2 cup heavy cream
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat, sautéing chopped onions and garlic until fragrant.
  3. Add sliced mushrooms and cook until browned.
  4. Stir in fresh spinach and cook until wilted.
  5. Layer tender chicken breasts in a baking dish.
  6. Pour the mushroom and spinach mixture over the chicken.
  7. Mix together cheese and heavy cream, seasoning with salt and pepper.
