Description

A hearty one-pot dish featuring tender chicken, creamy rice, and rich garlic flavors.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups long grain rice
  • 4 cups chicken broth
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil over medium heat in a large pot.
  2. Add the chopped onion and garlic and cook until soft, about 2-3 minutes.
  3. Season the chicken breasts with salt, pepper, and Italian seasoning. Add them to the pot and brown on each side, about 4-5 minutes.
  4. Stir in the rice to combine with the chicken and onions.
  5. Pour in the chicken broth, bring to a boil, then reduce heat, cover, and simmer for about 20 minutes until the rice is cooked.
  6. Remove from heat and stir in Parmesan cheese until melted and creamy.
  7. Garnish with fresh parsley if desired and serve hot.

Notes

For extra flavor, marinate the chicken in garlic and herbs for a few hours before cooking. You can add vegetables like peas or spinach in the last few minutes of cooking for added nutrition.
