Description

Crispy and flavorful Oven Fried Feta Rolls with a delightful chili honey drizzle, perfect for gatherings or a tasty snack.


Ingredients

  • Quality feta cheese (block, preferably packed in brine)
  • Frozen phyllo dough
  • Unsalted butter (melted)
  • Extra virgin olive oil (optional)
  • Honey (good quality)
  • Chili flakes (standard red pepper flakes or Aleppo pepper flakes)
  • Sea salt (optional)
  • Fresh lime or lemon juice (optional)
  • Fresh mint (finely chopped, optional)
  • Fresh dill (finely chopped, optional)
  • Fresh parsley (finely chopped, optional)
  • Lemon zest (finely grated)
  • Fresh garlic (finely minced or garlic powder)

Instructions

  1. Crumble the block of feta cheese thoroughly in a medium bowl.
  2. Chop about 2-3 tablespoons of fresh herbs if using and add them to the feta.
  3. Stir in a teaspoon of lemon zest and a tiny pinch of garlic powder or half a teaspoon of finely minced fresh garlic.
  4. Mix everything with a fork until well combined and taste for seasoning.
  5. Unroll the thawed phyllo dough onto a clean, dry work surface and cover it with a damp kitchen towel.
  6. Melt about 1/2 cup of unsalted butter (or warm olive oil) in a small bowl.
  7. Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  8. Remove one sheet of phyllo dough, lay it flat, and brush it lightly with melted butter or olive oil.
  9. Place a second sheet on top and brush it with butter, then repeat with a third sheet.
  10. Cut the stacked phyllo sheets lengthwise into three equal strips.
  11. Place about 1 tablespoon of the feta filling at one end of each phyllo strip, leaving a small border.
  12. Fold the short edge of the phyllo over the filling, then fold in the long sides and roll tightly upwards.
  13. Place the finished roll seam-side down on the prepared baking sheet and repeat with the remaining phyllo sheets and filling.
  14. Brush the tops and sides of each roll with any remaining melted butter or olive oil.
  15. Bake for 18-25 minutes until golden brown and crispy.
  16. Combine honey and chili flakes in a small bowl and warm the mixture for about 30 seconds while the rolls are baking.
  17. Drizzle the hot, crispy rolls with the chili honey before serving.

Notes

For best flavor, serve hot and fresh. These rolls can be refrigerated for up to 3 days. To reheat, place in a hot oven for a few minutes until crispy again.
