Description

A delicious and healthy meal option perfect for the Paleo and Whole30 diets, featuring crispy fries, bacon, and fresh veggies.


Ingredients

  • 2 large Russet potatoes
  • 1 tablespoon avocado oil or olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon nutritional yeast (optional)
  • 1/3 cup paleo mayo (homemade or purchased)
  • 1 tablespoon dijon mustard
  • 3 tablespoons ketchup
  • 1 tablespoon dill pick relish (or chopped dill pickles)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 6 slices paleo-friendly bacon (no sugar added for Whole30)
  • 1 lb ground beef (80% lean grass-fed beef)
  • 1/2 teaspoon sea salt (or to taste)
  • Large pinch black pepper (or to taste)
  • 1/2 teaspoon garlic powder
  • 4 cups greens of choice (e.g., hearts of romaine)
  • 1 cup cherry tomatoes (halved or sliced)
  • 1 medium purple onion (thinly sliced)
  • Sliced dill pickles (no sugar added for Whole30, add as many as you like)
  • 1 large avocado or two small ones

Instructions

  1. Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper.
  2. Toss the sliced potatoes in avocado oil, then sprinkle them with sea salt, black pepper, garlic powder, and nutritional yeast if you’re using it. Spread them on one baking sheet so that no fries touch each other.
  3. Roast the fries in the preheated oven for about 30 minutes or until they are golden brown and crispy.
  4. Place the bacon slices on the second baking sheet and bake for about 16–20 minutes, until cooked to your liking.
  5. Whisk together the paleo mayo, dijon mustard, ketchup, dill pickle relish, garlic powder, and onion powder in a small bowl until smooth. Set it aside.
  6. Heat a large skillet over medium-high heat with a drizzle of oil. Add the ground beef with sea salt, black pepper, and garlic powder. Cook for about 2–3 minutes, breaking up lumps until browned.
  7. Divide the greens among serving bowls. Top each with roasted fries, cooked bacon, ground beef mixture, cherry tomatoes, purple onion, dill pickles, and sliced avocado. Drizzle each bowl with the special sauce before serving.

Notes

Serve warm for the best flavor. Leftovers should be stored separately to maintain freshness.
