Description

A vibrant and comforting dish that features tender chicken thighs, fluffy rice, and a bright green sauce made from fresh cilantro and lime.


Ingredients

  • 1 pound chicken thighs
  • 1 cup rice
  • 2 cups chicken broth
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 bunch cilantro
  • 1 jalapeño (optional)
  • 1 lime, juiced

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken thighs with salt, pepper, cumin, and paprika. Brown the chicken on both sides until golden brown, about 5-7 minutes.
  2. Remove chicken and set aside. In the same skillet, add chopped onions and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.
  3. Stir in the rice, coating each grain with the oil and spices.
  4. Pour in chicken broth and bring to a boil. Return browned chicken to the skillet, reduce heat to low, cover, and let simmer for about 20-25 minutes, until rice is fluffy and chicken is tender.
  5. Blend cilantro, jalapeño (if using), garlic, lime juice, and olive oil in a blender until smooth to create the green sauce.
  6. Serve the chicken and rice with the green sauce drizzled on top.

Notes

For extra flavor, marinate the chicken thighs in the spice blend for a few hours. Adjust seasoning to your liking for the best flavor.
