- 2 boneless, skinless chicken breasts
- 1/2 cup basil pesto
- 2 bell peppers (any color), sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Parmesan cheese for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Coat the chicken breasts with the basil pesto and season with salt and pepper.
- In a large oven-safe skillet, heat the olive oil over medium heat.
- Add the chicken breasts and sear them for about 3-4 minutes on each side until golden brown.
- Add the sliced bell peppers around the chicken in the skillet.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, until the chicken is cooked through.
- Garnish with Parmesan cheese if desired and serve warm.
Notes
For extra flavor, marinate the chicken in the pesto for a few hours before cooking. You can add other vegetables like zucchini or onions for more variety. If you like a little heat, consider adding red pepper flakes.
