Description

A simple and delicious dish combining basil pesto with tender chicken and colorful bell peppers.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup basil pesto
  • 2 bell peppers (any color), sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Coat the chicken breasts with the basil pesto and season with salt and pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium heat.
  4. Add the chicken breasts and sear them for about 3-4 minutes on each side until golden brown.
  5. Add the sliced bell peppers around the chicken in the skillet.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, until the chicken is cooked through.
  7. Garnish with Parmesan cheese if desired and serve warm.

Notes

For extra flavor, marinate the chicken in the pesto for a few hours before cooking. You can add other vegetables like zucchini or onions for more variety. If you like a little heat, consider adding red pepper flakes.
