Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup melted butter
  • 1 cup crushed pineapple (drained)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)

Instructions

  2. Mix together the flour, sugar, baking soda, and salt in a bowl.
  3. Combine the melted butter, crushed pineapple, eggs, and vanilla in another bowl.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

Make sure to drain the pineapple well to avoid excess moisture. You can substitute sugar with alternatives for a healthier version.
