Description

Ingredients

  • 2 boxes (3.4 oz each) instant pistachio pudding mix
  • ¾ cup white sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ¾ teaspoon almond extract
  • 2¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 4 ounces cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 2 cups powdered sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • 1 tablespoon milk, optional
  • Chopped pistachios or sprinkles, optional

Instructions

  1. Preheat your oven to 350°F (177°C) and lightly grease a 9×13-inch baking dish or line with parchment paper.
  2. Beat together the softened butter, pistachio pudding mix, and white sugar until smooth and creamy.
  3. Add the eggs, vanilla, and almond extract, then mix until fully combined and fluffy.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Slowly add the dry mixture to the wet mixture and mix until just combined.
  6. Press the dough evenly into the prepared baking dish.
  7. Bake for 20-25 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  8. Allow the bars to cool completely in the pan.
  9. Beat together the softened cream cheese, butter, vanilla, almond extract, and powdered sugar until fluffy.
  10. If needed, add milk to achieve a creamy, spreadable consistency.
  11. Spread the frosting evenly over the cooled bars and top with chopped pistachios or sprinkles if desired.
  12. Cut the cooled bars into squares and serve.
