Description

Delicious pork kofta kebabs packed with spices and served with creamy tahini sauce.


Ingredients

  • 1 lb Ground Pork (Use 80/20 or leaner for best results.)
  • 1/2 cup Breadcrumbs (Gluten-free option available.)
  • 1 medium Yellow Onion (Chopped finely or processed.)
  • 2 cloves Garlic (Fresh for best flavor.)
  • 1/4 cup Fresh Parsley (Can substitute with mint.)
  • 1 tsp Dried Oregano (Optional, omit if desired.)
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Paprika (Can be omitted.)
  • 1 tsp Salt (Adjust to taste.)
  • 1/2 tsp Ground Black Pepper (Adjust to taste.)
  • 1/4 tsp Nutmeg (Optional, recommended.)
  • 1/4 tsp Cinnamon (Optional, recommended.)
  • 1/4 tsp Ground Allspice (Optional, recommended.)
  • 1/4 tsp Cayenne Pepper (Optional for heat.)
  • 1/4 cup Tahini (Fresh tahini is preferred.)
  • 2 tbsp Water (Add gradually to achieve desired thickness.)
  • 1 tbsp Lemon Juice (Fresh for optimal taste.)
  • 1/4 tsp Salt (To taste.)

Instructions

  1. Combine the ground pork, breadcrumbs, chopped onion, garlic, parsley, and all the spices in a large bowl. Mix until well combined.
  2. Form the mixture into kebabs, shaping them to your preferred size.
  3. Preheat the grill or oven at 400°F (200°C).
  4. Cook the kebabs for about 10-12 minutes on the grill or until they are fully cooked. If using an oven, place them on a baking sheet and bake until they are browned and cooked through.
  5. Prepare the tahini sauce by mixing tahini, water, lemon juice, and salt in a small bowl until smooth. Adjust the water to achieve your desired thickness.

Notes

For extra flavor, let the kebab mixture sit for 30 minutes before cooking. If the mixture is too wet, add more breadcrumbs to help bind the ingredients.
