Description

Delightful Portuguese Coconut Cakes that are moist, sweet, and filled with tropical coconut flavor, perfect for any occasion.


Ingredients

  • 1 cup grated coconut
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Powdered sugar for dusting (optional)
  • Coconut flakes for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or cake pan.
  2. Cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, mixing well after each addition.
  4. Stir in the grated coconut and vanilla extract.
  5. Combine the flour and baking powder in a separate bowl, then gradually add to the coconut mixture, mixing until just combined.
  6. Pour the batter into the prepared pan, filling each mold about 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
