- 1 cup sugar

Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin or cake pan.
- Cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, mixing well after each addition.
- Stir in the grated coconut and vanilla extract.
- Combine the flour and baking powder in a separate bowl, then gradually add to the coconut mixture, mixing until just combined.
- Pour the batter into the prepared pan, filling each mold about 2/3 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool slightly before removing from the pan.
- Dust with powdered sugar or top with coconut flakes, if desired.
