Description

Delightful crispy potato pancakes that are easy to make and perfect for any meal.


Ingredients

  • 4 medium russet potatoes
  • 1 medium onion, finely chopped
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil (for frying)

Instructions

  1. Grate the russet potatoes. Use a box grater or a food processor to grate them finely. Place the grated potatoes in a clean dish towel and squeeze out excess moisture.
  2. Combine the grated potatoes, finely chopped onion, eggs, flour, salt, and pepper in a large mixing bowl. Mix until well combined.
  3. Heat enough vegetable oil in a large skillet over medium-high heat until hot but not smoking.
  4. Form about 1/4 cup of the mixture into a patty using your hands and carefully place it in the hot oil. Cook for 3-4 minutes on each side until golden brown and crispy.
  5. Drain the pancakes on a paper towel-lined plate to remove excess oil. Repeat with the remaining mixture.
  6. Serve the potato pancakes warm, topped with sour cream or fresh herbs.
