A creamy and cheesy potato dish that pairs perfectly with steak or chicken, ideal for family dinners or special occasions.

- 4 large Russet Potatoes (or Yukon Gold)
- 1 medium Onion (or Shallots)
- 1 cup Sour Cream (or Greek yogurt)
- 4 tablespoons Unsalted Butter (or Olive oil)
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 2 cups Sharp Cheddar Cheese (or Gruyère)
- 1/4 cup Chives/Green Onions (or Parsley)
Instructions
- Preheat your oven to 375°F (190°C).
- Wash and peel the potatoes. Cut them into thin slices.
- Dice the onion into small pieces.
- In a pot, melt the butter over medium heat. Add the diced onion and cook until soft.
- In a large bowl, combine the cooked onions, sliced potatoes, sour cream, salt, and black pepper. Mix well.
- Layer half of the potato mixture in a greased baking dish. Sprinkle half of the cheese on top.
- Add the remaining potato mixture and finish with the rest of the cheese.
- Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes or until the top is golden and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
Top with chopped chives or green onions for added freshness. For a crispier top, broil for a few minutes.
