- 2 tsp taco seasoning
- 5 oz cottage cheese
- 5 cherry tomatoes
- 0.75 tsp pickled jalapeños (finely minced)
- 3 tbsp cheese
- 0.25 tsp onion powder
- 1.5 tsp cilantro
- 1 pinch Tajin
- Tortilla chips (thicker style)
Instructions
- Start by cutting the chicken into 1/2-inch cubes and placing them in a microwave-safe bowl. Add the salsa and taco seasoning.
- Microwave the chicken mixture for 1-2 minutes, stirring halfway through until the chicken is cooked through.
- Combine the cottage cheese, halved cherry tomatoes, pickled jalapeños, and onion powder in a blender. Blend until smooth and dip-like.
- Pour the cottage cheese mixture into another microwave-safe bowl and stir in the shredded cheese. Microwave for 1 minute, stirring halfway to heat evenly.
- Transfer the warm cheese dip to a serving bowl and top with the cooked chicken mixture. Garnish with fresh cilantro, extra cheese, and a pinch of Tajin.
- Serve the dish hot with thicker tortilla chips for scooping.
