Ingredients

  • 2 cloves Garlic (fresh)
  • 1 medium Red Bell Pepper (or other colored peppers)
  • 3 tablespoons Honey (or maple syrup)
  • 3 tablespoons Low-Sodium Soy Sauce (gluten-free options available)
  • 1/2 teaspoon Chili Flakes (optional)
  • 2 tablespoons Green Onions (for garnish)

Instructions

  1. Cook the Pasta: Boil a pot of salted water, add fettuccine, and cook according to package instructions until al dente. Drain and set aside.
  2. Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side or until fully cooked. Remove chicken and let it rest.
  3. Sauté the Vegetables: In the same skillet, add minced garlic and sliced red bell pepper. Cook for about 3-4 minutes until peppers are tender.
  4. Make the Sauce: Mix honey and soy sauce in a small bowl, pour into the skillet, add chili flakes if using, and let it simmer for 2-3 minutes.
  5. Combine Everything: Slice chicken into strips, return to the skillet, add drained pasta, and toss to coat in the sauce. Cook for an additional minute.
  6. Garnish and Serve: Remove from heat, sprinkle with chopped green onions before serving.

Notes

For extra flavor, marinate the chicken in honey and soy sauce for 30 minutes before cooking. Feel free to add additional veggies for nutrition.
