- 2 cups fresh raspberries
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 1/4 cup boiling water
Instructions
- Sprinkle gelatin over cold water in a small bowl. Let it sit for about 5 minutes and then stir in boiling water until dissolved.
- Blend the raspberries until smooth in a blender. Strain the mixture to remove seeds if desired.
- Whip heavy cream with powdered sugar and vanilla extract in a large bowl until soft peaks form.
- Fold the raspberry puree into the whipped cream gently.
- Combine the gelatin mixture with the raspberry cream mixture until well incorporated.
- Spoon the mousse into serving dishes and refrigerate for at least 120-180 minutes before serving.
- Garnish with additional raspberries if desired.
Notes
For best results, make sure your heavy cream is very cold before whipping.
