Description

A delightful dessert featuring the sweet and slightly tart flavor of fresh raspberries, combined with a light and airy mousse texture.


Ingredients

Scale
  • 2 cups fresh raspberries
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 1/4 cup boiling water

Instructions

  1. Sprinkle gelatin over cold water in a small bowl. Let it sit for about 5 minutes and then stir in boiling water until dissolved.
  2. Blend the raspberries until smooth in a blender. Strain the mixture to remove seeds if desired.
  3. Whip heavy cream with powdered sugar and vanilla extract in a large bowl until soft peaks form.
  4. Fold the raspberry puree into the whipped cream gently.
  5. Combine the gelatin mixture with the raspberry cream mixture until well incorporated.
  6. Spoon the mousse into serving dishes and refrigerate for at least 120-180 minutes before serving.
  7. Garnish with additional raspberries if desired.

Notes

For best results, make sure your heavy cream is very cold before whipping.
