- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/4 cup cocoa powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 large egg
- 1 tbsp red food coloring
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1 cup semi-sweet chocolate chips
Instructions
- Cream the butter and sugar until light and fluffy.
- Mix the dry ingredients in another bowl.
- Combine the dry mixture with the butter mixture.
- Add the egg, red food coloring, and vanilla extract. Mix until smooth.
- Bake at 350°F (175°C) for 20-25 minutes.
- Cool the cake completely.
- Prepare the filling by beating cream cheese and mixing in powdered sugar.
- Crumble the cooled cake into fine pieces.
- Combine cake and filling until well mixed.
- Shape into 1-inch balls and place on a baking sheet.
- Chill for at least one hour.
- Melt the chocolate chips in the microwave.
- Coat each truffle in the melted chocolate.
- Decorate with sprinkles or nuts if desired.
- Chill again for 30 minutes to set.
Notes
Use room temperature butter and cream cheese for easier mixing. Adjust the red food coloring to achieve your desired shade.
